soon Posted April 30, 2017 Share Posted April 30, 2017 Leant out my copy of Aaron Copelands Music and Imagination, The Art of the Gifted Listener (printed under a variety of similar titles). Its become clear that Im not getting it back. Really bummed. But at least this gives me the chance to suggest it. Its Copeland, a composers, essays and one of them in particular, The Gifted Listener is so illuminating. He talks about the informed listener - a non musician - being of great importance to music. I put up a post in home cooking thread if anyone could post some asian sauce/condiments recipes. No one has replied yet. If theres anything you feel like posting that would be awesome? Closest Ive got is making a "wasabi" out of my garden horseradish, turmeric and spirulina to eat with some California rolls and tempura I made. The thing with sushi is that it is a separate thing within Japanese cuisine; a sushi chef specialises in sushi (and sashimi) and that is all he does, and vice versa, chefs of the rest of the cuisine may not have the slightest clue on making sushi. But yes, I've done it twice. Not that neat and elegant I'm afraid on account of my inexperience and large Englishman's hands, but the taste was there. The most important part is actually the rice; it has to be cooled down and dressed it in rice wine vinegar mixture. I really like the Japanese stews and teriyaki marinades.
