Mary Berry's recipe for mushroom risotto. My husband's review is "The risotto tastes delicious Grace, but why did you put all that green shit on top?"

It was my first time cooking with arabiata rice, porcini mushrooms and fresh rosemary. I have a sore finger from all the stirring, but it was really creamy and not stodgy at all. Would definitely make again.

The recipe said so.

I had 20 years of cooking in the countryside, meaning we had to make do with what we had in, as the village shop didn't stock ingredients beyond eggs and milk. I got bored of making do, it always left me with substandard food and I felt cheap. So now I can afford and access all the ingredients I want, I like to do what the recipe specifies to get the best out of it.

The green stuff also makes it look less like porridge.
